- 200 ml vegetable oil
- 150g golden granulated sugar
- 100g dark brown soft sugar
- 2 teaspoons vanilla extract
- 60g cocoa powder
- 100g self-raising flour
- 1/4 teaspoon salt
- 1/4 teaspoon sodium bicarbonate
- 100g chopped walnuts (optional)
- Preheat oven to 180 degrees C, (165 degrees C fan assisted), 350 degrees F, gas mark 4. Prepare a 20 x 25cm baking tin by greasing and lining with greaseproof paper
- Put all ingredients in a large mixing bowl and beat well together

Put mixture into prepared tin and bake for 25 - 30 minutes, depending on how chewy you like your brownies

Let the brownies cool in the tin (unless you want to eat them warm), then turn out.
You can serve them as they are, or with a little sprinkle of sieved icing sugar, or you can sprinkle on chocolate chips while still hot and they melt on to the surface.
