Brownies Recipe

  • 200 ml vegetable oil
  • 150g golden granulated sugar
  • 100g dark brown soft sugar
  • 2 teaspoons vanilla extract
  • 60g cocoa powder
  • 100g self-raising flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon sodium bicarbonate
  • 100g chopped walnuts (optional)


  • Preheat oven to 180 degrees C, (165 degrees C fan assisted), 350 degrees F, gas mark 4. Prepare a 20 x 25cm baking tin by greasing and lining with greaseproof paper

  • Put all ingredients in a large mixing bowl and beat well together
  • Put mixture into prepared tin and bake for 25 - 30 minutes, depending on how chewy you like your brownies

  • Let the brownies cool in the tin (unless you want to eat them warm), then turn out.

  • You can serve them as they are, or with a little sprinkle of sieved icing sugar, or you can sprinkle on chocolate chips while still hot and they melt on to the surface.

Normally you can buy the cakes in Gatcombe Farm Shop which is on the Weston Road leading into Long Ashton, Bristol. They sell their own beef, pork, lamb... etc and sell many local products.

Make different flavoured sponges

  • Add a half a teaspoon of strawberry essence and a few drops of cochineal(to make the sponge a pink colour) to make a strawberry flavoured sponge
  • Add half a teaspoon of almond essence to make an almond-flavoured sponge

Chocolate, Coffee, Lemon Sponge


The recipe is same for 3 flavours - Chocolate, Coffee&Lemon.

  • Add the grated rind of a lemon or orange to make a citrus sponge.
  • Or add 2 level tablespoons of cocoa powder to make chocolate.

Victoria Sponge Recipe



  • 175g soft margarine
  • 175 caster sugar
  • 3 large eggs
  • 175g self-raising flour
  • 1 teaspoon Madagascar Bourbon vanilla extract
  • Grease and line 2 18cm sandwich tins
  • Pre-heat oven to 180 degrees C or 350 degrees F

Put all ingredients into a large bowl and beat well until thoroughly blended.Divide the mixture between the two tins, and bake in the oven on the middle shelf for about 28 minutes, or until well risen and golden.
Cool on a wire rack for about 10 minutes and then turn out. When cold, sandwich the cakes together with strawberry or raspberry jam.
